Here is the list of some of the ciders available:
(1) Atlantica - foeder aged cider, featuring Baldwin, Calville Blanc d'Hiver, & Golden Russet apples, fermented in our 25HL oak foeder with native yeasts. Inspired by Basque and Asturian sidra tradition. (6.9%)
(2) Bembel - German inspired cider, featuring Newtown Pippin & Northern Spy apples, fermented with a Riesling yeast culture at cold temperature, cold conditioned for an additional two months. Inspired by Frankfurt cider traditions. (7.1%)
(3) Float Away - traditional dry cider, featuring American heirloom apples (like Rhode Island Greening, Esopus Spitzenberg, & Golden Russet) from New England, fermented with native yeasts, and aged in oak barrels. Inspired by American cider traditions. (7.5%)
(4) Roses Red - rosé cider with Pinot Noir wine, featuring Goldrush and Black Twig apples, blended with Pinot Noir wine, and aged in French oak barrels for 10 months. Inspired by our favorite Brachetto wines. (8.2%)
(5) Preserved Memory - blueberry cider with Frontenac Noir wine, featuring Northern Spy & Baldwin apples, rested on organic lowbush blueberries from Lost & Found Farm, and blended with Frontenac Noir wine aged in bourbon barrels. Capturing the essence of blueberry harvest. (7.9%)
(6) Dayglow - cider rested on L'Acadie grape must, featuring Golden Russeet & McIntosh apples, rested on L'Acadie grape must, and aged in Moscatel barrels for a year. Inspired by our favorite orange wines. (6.7%)
(7) White Lotus - cider with Vidal Blanc wine, featuring Golden Russet, Baldwin, & Wickson apples, blended Vidal Blanc wine, and aged in French oak barrels for 10 months. Inspired by the flavors of our favorite Loire Valley wines. (8.0%)
(8) Magnified Dreams - cider with Sangiovese & Petite Sirah wine, a single varietal Newtown Pippin cider blended with two different red wines, and aged together in French oak barrels for 11 months. This is a 2022 vintage that has been aging in our cellar for over a year. (9.7%)
(9) Electric Sheep - cherry cider with Traminette wine, featuring Black Twig & Arkansas Black apples rested on cherries, blended with Traminette wine, and then aged together in French oak barrels for 10 months. (8.3%)
(10) Groundwork: Pietree - single orchard cider, featuring a field blend of 30 different heirloom apple varieties from Pietree Orchard in Sweden, Maine, fermented with native yeasts, and aged in American oak barrels. The distinct flavors of a place. (7.4%)
(11) Spur - smoked cider, featuring Paula Red, William's Pride, & Yellow Transparent apples smoked with applewood, and blended with a single varietal Winesap cider. Inspired by the flavors of Grodziskie beers. (6.5%)
(12) Lost Art - oak aged cider, featuring McIntosh, Empire, & Rome Beauty apples, used the Bâtonnage technique to stir-up the lees during the aging process, and aged in new French oak barrels for 12 months. Inspired by the magic of extended oak aging. (6.8%)
(13) Fortuna: Barrel #1 - single barrel cider, featuring a single barrel selected from our 50+ barrels in production that exhibited a superior grade or Grand Cru status, this specific barrel was a single varietal Ashmead's Kernel cider fermented with native yeasts. (7.9%)
