SPUR IS BACK ON DRAFT & IN BOTTLES starting January 24th, 2025
After a brief hiatus, SPUR returns to our taps in the tasting room. Spur combines wispy smoked notes, with a refreshing fruity apple finish. As fans of smoked beverages like rauchbier, grodziskie, mezcal, and peated whiskeys – we wanted to create something that brings these same flavors to cider.
This draft-only batch utilizes McIntosh, Cortland, & Northern Spy apples that were smoked in our smoker in February of this year using applewood and cherrywood. We then ground up these apples and added Northern Spy juice to macerate for three days on the ground apples before racking and pressing this pomace. We then ferment the cider spontaneously and age it for six months in stainless tanks until dry. Lastly, we blend in a little Northern Spy (unsmoked cider) for balance, aiming towards a more subtle smokey note.
The combo tastes like cinnamon apple sauce, dried pears, and finishes smokey. The smoked notes remind us of some of the same “barbecue” qualities that rauchbier (aka German smoked beer) provides.
