Underveil (21β)
A cider spontaneously fermented in stainless steel then aged in Sauternes barrels from Bordeaux, France for nine months. Made with almost exclusively Harrison apples (with a touch of Empire apples). The blend focuses on the singular notes from Harrison apples and the complementary floral notes from noble Sauternes wines. Captures the true essence of the barrel itself. The drinking experience mimics some of the delicate flavors found in mix-fermentation beers. Conditioned for five months in bottle before release.
