Bushido (22’)
A smoked foraged apple cider blended with Cabernet Sauvignon wine. We collected apples from three different trees in Cumberland, Maine that already exhibited smoky flavors so we doubled down. We cut the apples in half and smoked them with applewood in our smoker before fermenting them. After aging for an additional three months, we combined the cider with Cabernet Sauvignon wine aged in French oak for eight months. It’s our unapologetic love letter to all things smoky and jammy.
Smoked cider is a unique style we hope to keep producing and pioneering for many years. The concept was originally blended in celebration of our first ever cider dinner at Oxbow Beer Garden back in spring 2022. We cherish many of Oxbow Brewing Company’s smoked beers like Vestige & Sap Haus and thought this cider would be a worthy companion.
