Ferryman (22’)
A cider fermented with native yeasts in stainless, macerated on Frontenac Noir grape must, and then aged in Port Wine barrels from Portugal for twelve months. Made with a blend of Baldwin, Northern Spy, and Winesap apples. The idea for the blend originated from our passion for exploring the influence of extended barrel aging on cider, and eventually grew into a co-ferment. The name is inspired by the people who used to transport Port Wine down the Douro River to Porto.
