Magnified Dreams (22’)

A cider made with Newtown Pippin apples, Sangiovese wine, and Petite Sirah wine. This multi-part cuvée was fermented separately and then aged together in French oak barrels for eleven months. The mélange is closer to a 50/50 split of cider and wine. The overall beverage drinks a lot more like a red table wine. We feel the Newtown Pippin cider softens and adds acidity to the tannic edges of the Petite Sirah and Sangiovese wine making for a great pairing with lots of different foods.

  • cider is fermented with a Gewürzstraminer yeast culture in stainless steel tanks.

    wine is fermented with native yeasts in French oak barrels.

  • no added sulfites, no filtration

  • cold-conditioned for one week
